Cannellini Bean and Rocket Salad

500g Riviana Cannellini Beans, rinsed and drained

300g Riviana Sun Dried Tomatoes

220g Riviana Marinated Artichoke Quarters

250g baby rocket

2 pears, peeled and diced

2 garlic cloves, minced

20ml lemon juice

40ml olive oil

2 tbsp Riviana RedWne Vingar

1 tspn ground cumin

salt and pepper, to taste


Combine the beans, sun dried tomatoes, artichokes, rocket and pears.

In a small bowl combine the remaining ingredients.

Toss dressing through salad to coat.  Season to taste.
