Tuna Salad

320g rocket leaves,
1kg Riviana Cut Baby Corn, drained
1.2kg Riviana Tuna Chunks in Brine, drained and flaked into large chunks
800g Garden Supreme IQF green beans
1 bunch coriander

200ml Always Fresh Extra Virgin Olive Oil
120ml fresh lime juice
80ml Riviana Thai Style Chilli Sauce
60g sesame seeds, toasted
salt and freshly ground black pepper, to taste
30g sesame seeds, toasted


Divide rocket leaves among serving plates.


Combine corn, tuna, beans and coriander in a large bowl.


Put dressing ingredients in a screw-top jar and shake well.


Drizzle dressing over corn salad and gently toss. Serve over rocket leaves and sprinkle with remaining sesame seeds.

Tips and hints:Salmon may be substituted for the tuna. For customers who love hot and spicy food, serve extra Riviana Sweet Chilli Sauce in a small jug on the side of the plate.
