Satay Medley

Ingredients:

ORIENTAL MARINATED CHICKEN DRUMMETTES:

  • 2.4kg chicken drummettes
  • 125ml Riviana Thai Sweet Chilli Sauce
  • 125ml Riviana Soy Sauce
  • 125ml Riviana Oyster Sauce
  • 40g Riviana Minced Garlic
  • 40g Riviana Crushed Ginger

SATAY PORK SKEWERS:

  • 2.4kg pork fillets, cubed
  • 40g Riviana Minced Garlic
  • 500ml satay sauce
  • 1 bunch coriander,  leaves roughly chopped
  • 60g sesame seeds, toasted

GARLIC CHILLI PRAWNS:

  • 48 green prawns, peeled, tails left intact
  • 40g Riviana Minced Garlic
  • 250ml Riviana Thai Sweet Chilli Sauce
  • 125ml Garden Supreme Coconut Milk
  • 1 small bunch coriander,  leaves roughly chopped

Method:

Oriental Marinated Chicken Drummettes

  1. Preheat oven to 200°C. Place all ingredients in a large bowl and mix well to coat all chicken in sauce. Cover with plastic wrap and refrigerate for 1–2 hours.
  2. Line a large baking tray with baking paper, place chicken and marinade on tray.
  3. Bake for 15 minutes or until cooked through, turning halfway.
  4. Place chicken on a platter and serve immediately.

 

Satay Pork Skewers

  1. Preheat oven to 200°C. Soak 48 bamboo skewers in water for 2 hours.
  2. Divide pork into 48 batches and thread onto skewers. Place in a shallow dish.
  3. Combine garlic, satay sauce and coriander, pour over pork until well coated. Cover with plastic wrap and refrigerate for 1–2 hours.
  4. Line a large baking tray with baking paper, place skewers and marinade on tray.
  5. Bake for 15 minutes or until cooked through, turning halfway.
  6. Place skewers on a platter, sprinkle with sesame seeds and serve immediately.

 

Garlic Chilli Prawns

  1. Soak 48 bamboo skewers in water for 2 hours.
  2. Thread a prawn onto each skewer lengthways. Place in a shallow dish.
  3. Combine garlic, chilli sauce, coconut milk and coriander, pour over prawns until well coated. Cover with plastic wrap and refrigerate for 20 minutes.
  4. Chargrill on high heat for 1 minute on both sides until cooked. Serve immediately.
