Raspberry & Blueberry Muffins

Riviana Canola Oil Spray
325g self-raising flour
165g caster sugar
2 eggs, lightly beaten
180ml milk
60ml Pure oil
240g Garden Supreme IQF Blueberries
240g Garden Supreme IQF Raspberries


Spray the holes of a 1 cup capacity muffin tin lightly with canola oil, and line each hole with squares of baking paper.


Place all ingredients in a large bowl and stir until just combined. Fill muffin holes three-quarters full with mixture.


Bake at 180°C for 25 minutes or until golden brown. Serve warm or cold.
