Oatmeal, Apple, Banana Low Fat Muffins

Ingredients:

1 ¼ cups large rolled oats (reserve a ¼ cup to sprinkle on top)

1 ½ cups wholemeal flour

2 tsp baking powder

¼ tsp salt

1 tsp cinnamon

¼ tsp nutmeg

2 eggs

4 tblsp vegetable oil

6 tblsp caster sugar

⅔ cup low fat milk

120g Riviana Apple Puree

1 cup mashed ripe banana

Method:

Pre heat oven to 160°C. Mix together the oatmeal, wholemeal flour, baking powder, salt, cinnamon and nutmeg. Set aside.

Beat the eggs, oil and sugar until fluffy. Blend in the milk and apple puree. Fold into the dry ingredients until almost incorporated and then fold in banana.

 

Spoon into greased or paper lined muffin tins and bake for 20-25 minutes or until a toothpick inserted in the centre comes out clean. Best served warm.
