Fudgy Black Bean Brownies

  • 750g drained Riviana Black Beans
  • 75g Dutch-processed cocoa powder
  • 90g oats
  • 1/3 tsp fine salt
  • 150g brown sugar
  • 150g coconut or vegetable oil
  • 15mL pure vanilla extract
  • 15g baking powder
  • 150g chocolate chips
  • 75g walnuts, roughly chopped


  • Toasted walnuts, to sprinkle
  • Dark chocolate ganache, to drizzle


  1. Preheat oven to 150°C (fan forced). Grease and line a 20cm x 30cm baking pan with baking paper.
  2. Combine all ingredients except choc chips and walnuts in food processor and blend until smooth.
  3. Stir in the choc chips and walnuts and spoon into prepared pan. Smooth surface.
  4. Bake for 25 – 30 minutes until the top is firm and dry. Remove from oven and allow to cool for at least 30 minutes before removing from pan. May be served warm or at room temperature.
  5. Cut into 12 slices and place on serving plates. Scatter with topping nuts and drizzle with ganache.
