Coconut Vegetable Curry

Ingredients:

40ml Always Fresh Pure Olive Oil
300g onion, cut into slivers
60g green curry paste
500g Garden Supreme IQF Baby Carrots
500g Garden Supreme IQF Cauliflower
500g Garden Supreme IQF Whole Baby Beans
500g Garden Supreme IQF Leaf Spinach Portions
400ml Garden Supreme Coconut Milk
20ml fish sauce
15g crispy fried shallots
50g fresh coriander leaves, for garnish

Method:

Heat the Always Fresh Pure Olive Oil in a large pan and sauté the onion until softened. Add the curry paste and sauté until aromatic.

 

Add Garden Supreme Carrots and Cauliflower and cook, stirring for 5 minutes. Add Garden Supreme Baby Beans, Spinach Portions, Coconut Milk and fish sauce. Bring to the boil and simmer for 5-10 minutes until all vegetables are warmed through.

 

Serve garnished with fried shallots and coriander leaves.

 

Portion approximately 500g tajine in each serving bowl and serve dolloped with 50g yogurt and 5g coriander leaves.
