Coconut Semolina with Passionfruit Pears

1.25 litres Garden Supreme Coconut Milk
1.25 litres reduced fat milk
125g caster sugar
320g fine semolina
1 kg Riviana Halved Pears in Natural Juice
200g Riviana Passionfruit in syrup
50g toasted shaved coconut, for garnish
mint leaves, for garnish


Heat Garden Supreme Coconut Milk, milk and sugar together in a large saucepan until starting to simmer. Whisk in semolina and just bring to the boil, stirring continuously, until thickened. Allow to stand for 5 minutes to thicken further.


Portion coconut semolina into bowls and top each serving with 100g Riviana Halved Pears and 20g Riviana Passionfruit. Sprinkle with 5g coconut and garnish with mint leaves.
