Caramelised Apple Waffles

  • 2 The Australian Waffle Co. Belgium Style Liege Waffles
  • 1/2 apple, sliced thinly
  • 1 serve Apple Butterscotch Sauce (see below)
  • 1 tbsp double cream

Apple Butterscotch Sauce (Makes approx. 6 serves)

  • 500ml cloudy apple juice
  • 300g Demerara sugar
  • 120g unsalted butter, cubed, at room temperature
  • 120ml fresh cream, at room temperature
  • 1/4tsp salt
  • 1/2 tsp vanilla extract


  1. Add apple juice to a small saucepan and bring to the boil over medium heat. Continue to boil to reduce by half.
  2. Add sugar and stir to dissolve. Add butter, slowly, continuously stirring until melted.
  3. Add cream and salt and stir until combined. Bring to a gentle boil and cook for 2-3 minutes until sauce thickens. Remove from heat and add vanilla.
  4. Allow to cool before use.
  5. Lightly toast waffles and then top with sliced apple, cream and drizzle with apple butterscotch sauce.
