Black Beans and Avocado Wraps

P20 minutes S4

Ingredients:

235g Riviana Black Beans, rinsed and well-drained

275g Riviana Corn Kernels, drained

2 tomatoes, diced

1/2 red onion, diced

1/4 bunch coriander, choppped

1 lime, juiced

40ml extra virgin olive oil

125ml Riviana Red Wine Vinegar

½ tspn ground cumin

salt and pepper, to taste

1 avocado, sliced

4 large or 8 small tortilla wraps

Method:

Combine ingredients (except avocado and wraps) in bowl.  Season with salt and pepper.

Heat wraps. Place avocado and salad in centre and season.
