600g SR flour
200g brown sugar
2 tsp cinnamon
4 eggs, lightly beaten
250ml vegetable oil
2 tsp vanilla essence
460g Riviana Diced Apple
1 carrot grated
2 cups zucchini, grated
Pre heat oven to 180°C (160°C for fan-forced). Grease 2 x 12 cup muffin tins.
Combine the flour, sugar and cinnamon. Add the remaining ingredients into the mixture until all ingredients are just moist.
DO NOT OVERMIX.
Spoon mixture evenly into muffin tins and bake for 20 – 25 minutes.
