French Toast

P15 minutes C25 minutes S12

Ingredients:

12 eggs
340ml Garden Supreme Coconut Cream
490ml maple syrup
24 thick slices of bread
Riviana Canola Oil Spray
6 IQF Mango Cheeks
300g Garden Supreme IQF Strawberries
300g Garden Supreme IQF Blueberries
120g flaked coconut, toasted
icing sugar, to serve

Method:

Blend eggs, coconut cream and 250ml maple syrup together. Spray a large baking dish generously with canola spray, and add bread in a single layer.

 

Pour over coconut cream mixture, and leave to soak in for 5 -10 minutes.Grill/bake at 200°C for 10 minutes or until golden. Alternatively, cook toast in a frypan using canola oil and butter.

 

To serve, top toast with sliced mango, berries, flaked coconut and remaining maple syrup and dust lightly with icing sugar .
