Meringues using Aquafaba

Ingredients:

200ml Riviana Chickpea liquid (aquafaba)

200g caster sugar

whipped cream, to serve (whipped coconut cream for vegan option)

berries, to serve

Method:

Preheat oven to 120 C.   Line trays with baking paper.

Place liquid into the bowl of an electric mixer.  Beat on high speed until liquid turns white and is thick.  Slowly add sugar and continue beating until thick and glossy.

Spoon mixture evenly ino 18 portions onto trays.  Bake for 1 hour.  Turn off oven and prop door open.  Leave to cool slowly in the oven.

To serve, top with whipped cream and berries.
